Job description: Senior Head Chef- New Opening Restaurant- Brighton 75k OTE
Salary £70-75,000 all-inclusive
January start is ideal and opening April 2024
We are looking for a confident and well trained Senior Head Chef with a stable CV of working in high quality and recognised restaurants with volume
Our client is established and opening a new site specialising in quality ingredients cooked over fire and specialising in Steak and seafood. The role will include the management, organisation and set up and running of the kitchen, produce and recipes working closely with the senior team
Skills & Experience Required
- An ambitious Exec/Head Chef with at least 5 years’ experience managing busy kitchens
- A passion for cooking with fire, experience cooking on a Josper and with different fire techniques
- Backgrounds in Premium Steak restaurants or volume rosette restaurants
- Managed teams of 15 plus
- This site will seat around 160 covers
- Full knowledge and understanding of food preparation standards and procedures
- To be hands-on and take an active part in day-to-day operations
- Understanding of current food trends
- Financials- Costing of dishes, wage control and seasonal menu writing
- Responsible for the quality of all the food prepared in the kitchen
- Further develop the teams knowledge and skill set
- A proven track record of managing budgeted GPs and 5* Food Hygiene and Health & Safety ratings.
- Excellent command of the written and spoken English.
