Job Description

  • Managing of the entire kitchen operation in line with set objectives and financial targets whilst maintaining and where necessary improving food and general standards and excellence customer service delivery
  • Develop menus, food purchase specifications and recipes
  • To ensure the efficient management and functioning of all kitchen staff and other related duties in the kitchen
  • Complies with company and franchise standards of operation procedure, applicable regulatory agencies and HACCP management

Qualifications

  • Extensive knowledge of International Food and Beverage products, dishes and trends

  • Proven track record in terms of leadership ability and must display an ability to communicate freely with subordinates, peers, managers and the public in general
  • An organised person, neat and tidy in appearance with a positive attitude to his/her work
  • Outstanding communication / managerial skills
  • Exceptional organisational skills with high levels of initiative
  • High level of mental alertness

Detailed Responsibilities

  • Proactively coaching and motivating team members to deliver their best
  • Identifying opportunities and driving improvements in both the food and financial performance
  • Overseeing all aspects of a safe and sanitary culinary department
  • Working closely with the purchasing and finance teams to develop an offer that delivers financially and delights our guests
  • Building and developing the on-site culinary team
  • Working closely with the regional and Home Office culinary teams to continually evolve the food experience for guests
  • Support efforts to drive revenue by participating in social media activities
  • Overseeing equipment maintenance routines
  • Ensuring the creation of appropriate par levels in line with sales forecasts
  • Creating and distributing team members schedules in line with revenue forecasts
  • Overseeing menu design and updates in line with food trends and internal data, cost of goods, and popularity
  • Creation of menu build diagrams
  • Maintenance of recipe specifications, partnering with the purchasing team to continually update based on product availability and pricing
  • Overseeing all routine kitchen management procedures including (but not limited to) opening and closing checklists, cleaning schedules, temperature checks, waste sheets and pest control
  • Creation of customized group sales/event menus in partnership with the sales teams
  • Setting standards for chef table setups
  • Creation of prep sheets and line layout diagrams to ensure consistent and efficient food production.
  • Delivering training and coaching to team members on both the menu and general culinary skills
  • Management of team member breaks to ensure the well-being of all team members
  • Attending location management team meetings to maintain and build collaboration with other departments
  • Delivery of pre-shift meetings to set the tone for events
  • Conducting progressive discipline with team members to address any issues in relation to performance
  • Completing onboarding and orientation for new members of the culinary team
  • Ensuring all elements of food ordering, delivery, prep, transportation, and service are conducted to a high standard in line with Levy’s sanitation and safety Core Signatures
  • Responding to emails/phone calls and other communication in a timely manner
  • Ensuring calorific analysis is carried out on all menu items in line with FDA guidelines
  • Partnering with the purchasing and operations teams to identify and proactively prevent loss of product
  • Partnering with other departments and the regional team on community outreach programs
  • Managing support travel by team members for other locations
  • Management of culinary department budget
  • Other duties as assigned

Job Requirements

  • 5+ leadership experience in a culinary leadership position
  • Ability to taste and evaluate food and beverage products
  • A culinary degree is preferred
  • High level of computer literacy
  • Understanding of financial concepts
  • Passion for hospitality, food, and retail
  • Excellent interpersonal and stakeholder management skills
  • Experience in the use of social media is preferred

DUTIES

As a Sous Chef, some of your responsibilities will include:

  • Assisting the Chef/Kitchen Manager in daily activities and supervising salad, soup and other cases
  • Consulting with the Chef/Kitchen Manager on a daily basis to ensure that timing of orders and production schedules are coordinated
  • Stock products and assist customers
  • Assisting the Chef/Kitchen Manager with maintaining inventory of fresh products and supplies
  • Work closely with the Meat, Seafood, Produce and Grocery departments
  • Train and evaluate employees (as needed)

QUALIFICATIONS

The ideal candidate will have at least 1 year experience in this field. Catering experience is preferred, but not required. Applicants should be available any shift including weekends. You must be 18 years or older.

​Essential Duties:

  • Performs all responsibilities in a manner that is consistent with the community’s operating and service philosophy
  • Maintains a professional appearance, manner, and approach while on duty.
  • Monitors, on a routine and ongoing basis, key measurable indicators of the daily operations.
  • Implements established policies and procedures and standards of performance.
  • Helps develop in-service training and ongoing training of staff in order to provide high quality
  • Participates in departmental and community meetings and projects as directed by Executive Director
  • Maintains appropriate levels of confidentiality
  • Attains and/or maintains ongoing compliance with appropriate local state, federal, regulatory, and/or accrediting body standards. ensures that the program is prepared for inspection by regulatory agencies through regular auditing and updating of program policies and procedures, required documentation, environmental standards, etc.
  • Administers, plans, and directs activities of food service department providing quality food service.
  • Controls costs and manages Food Service department budget.
  • Implements policies and procedures, and provides administrative direction for menu formulation, food preparation and service, purchasing, sanitation standards, safety practices, and personal utilization.
  • Selects, orients and coaches kitchen staff, and helps develop and direct departmental educational programs.
  • Schedules kitchen food service personnel to optimize quality service and departmental profitability.
  • Ensures proper maintenance and cleanliness of all equipment.
  • Monitor, evaluate and maintain food purchasing and inventory
  • Coordinates interdepartmental professional activities and serves as consultant to management on matters pertaining to food service.
  • Supervises activities of workers engaged in food preparation and service.
  • Consults with physicians and health care personnel and/or dietary specialists to determine nutritional needs and diet restrictions, such as low fat or salt free, of residents.
  • Formulates menus for special diets based on medical and physical condition of residents and integrates special menus with basic menus.
  • Inspects meals served for conformance to prescribed diets and for standards of palatability and appearance.
  • Consults with Executive Director to ensure that menus and policies and procedures conform to nutritional standards, government regulations, and the organization’s procedures.
  • Consults with Executive Director to best ensure resident satisfaction and to best endure quality.
  • Establishes kitchen staffing schedule and monitors staffing.
  • Responds to special needs of residents.
  • Emphasizes safe food handling practices.
  • Works closely with Dining Room Manager to ensure all SRG standards of service, policies and procedures are met in the Food Service Department.
  • Works closely with corporate F&B team to ensure SRG compliance in Food Services.
  • Promotes and supports Genuine Hospitality Program.

Qualifications

  • Five years supervisory experience required.
  • Food Service experience in hospitality, country club, or senior living industry preferred.
  • Ability to write reports, business correspondence, and procedure manuals.
  • Ability to apply concepts such as fractions, percentages, ratios, and proportions to practical situations. Ability to develop, monitor, and adjust a budget.

Job Summary

PURPOSE OF THE POSITION:

You will provide professional culinary services for Royal Canadian Pacific, Canadian Pacific Board and Executive and CPR Pavilion.

POSITION ACCOUNTABILITIES:

  • Create memorable dining experiences for all CPKC guests for moving train, stationary, CPR Pavilion and off-site catering events and all corporate Hospitality events
  • Plan and implement all phases of food preparation, menu planning, purchasing, inventory management and cost controls
  • Design opportunities to increase food revenue, decrease kitchen expenses and maximize productivity without compromising guest satisfaction
  • Support a safe working environment by ensuring all staff are working in compliance with Occupational Health and Safety Act, WHMIS and federal health regulations
  • Maintain all kitchen equipment in clean and proper working condition and report any equipment in need of repair. Sanitation of all food production and storage areas
  • Maintain a record of individuals with special dietary requirements and preference and ensure that these are properly accommodated in the planning of menus and preparing of food
  • Select and use only the freshest fruits, vegetables, meats, fish, fowl and other food products of the highest standard in the preparation of all menu items. Monitor to ensure proper receiving, storage (including temperature setting) and rotation of food products to comply with health and safety regulations including coverage, labeling, dating, and placing items in proper containers of kitchen and service
  • Management and development of the CPKC Wine Cellar with view to menu planning and corporate gifting
  • Mentorship and training of apprentice chefs
  • Knowledge of new trends in food presentation and preparation

POSITION REQUIREMENTS:

  • Minimum of Chef Journeyman’s Papers or international equivalent
  • ProServe and Food Safety certification
  • Standard first aid
  • Thorough working knowledge of hot and cold food preparation
  • Knowledge of new trends in food presentation and preparation
  • Knowledge of wines and wine/food pairing and presentation
  • Ability to develop and execute new and innovative menus
  • Ability to analyze and interpret financial information related to menu planning, food costing, yield calculation, and portion control
  • Able to maintain accurate records pertaining to food safety and purchasing
  • A passion for food, desire to further develop culinary and leadership skills
